Hello!  I’m Jan Steele, Nutritional Therapy Consultant and Cooking Instructor specializing in gluten-free diets.  (I am also a lifelong Celiac, and the mother of two children who’ve been eating gluten-free for the past 8 years).

in a community of people living well, gluten-free. 

Swimming against the current can get tiring, over time.  Come and enjoy a break, while also exploring the habits and skills necessary to live well, gluten-free, in France.

We’ll enjoy nutrient-dense and delicious gluten-free meals, we’ll discuss ingredients, kitchen skills, and gluten-free baking and pastry… all in the beautiful natural surroundings of the Cévennes National Park.

L’accueil chaleureux de Jan et Thierry et la présence joyeuse de leurs deux enfants créent une ambiance propice à de bons moments de convivialité. Comme s’y ajoutent un environnement calme et verdoyant ainsi qu’une chambre agréable – bonne literie et réveil au chant des oiseaux – cet hébergement est un lieu parfait pour se ressourcer. Enfin mentionnons les délicieux repas proposés à la table d’hôtes. Ayant participé aux ateliers “sans gluten… intelligemment”, nous avons apprécié l’enthousiasme de Jan pour communiquer sur ce sujet mêlant art culinaire et santé.  En conclusion c’est une adresse que nous recommandons aussi bien pour ceux qui doivent manger sans gluten que pour tous les autres.

Super séjour pour nos 10 ans de mariage pour ma femme coeliaque et moi.  Jan a su s’adapter aux nombreuses restrictions de celle-ci.  Hébergement vraiment top et surtout la restauration innovante et recherchée a été plus qu’à la hauteur de nos attentes.

Nous avons passé un excellent we à La Goose. Le lieu est magnifique, autant la chambre que le jardin avec son ruisseau, qui appelle à faire une bonne sieste. Que ce soit, moi, mon mari ou nos 2 enfants, nous nous sommes régalés dans tous les sens du terme, que ce soit lors des échanges avec Jan et sa famille, la découverte du régime paléo, les ballades autour du gîte … Nous reviendrons avec plaisir pour un prochain séjour et/ou pour un atelier cuisine avec Jan.

Accommodation

Come and reconnect… to your own body’s needs, to others, and to the natural world.  Our Bed & Breakfast is situated in the South of France, at the very end of a small town called Cros.

You will be assigned a bed in a comfortable private or shared bedroom / bathroom, according to your preference.  Weather permitting, meals will be served outside, under the pergola.

On our property, a small creek flows among hammocks and benches.  Chickens run free in the garden all day, and from across the creek, our donkeys will call to you with a friendly “hee-haw”.  Forest walks abound, as do spots by the river to wade, re-ground, or just reconnect to the natural world.

Meals

Your “chef de table” and cooking instructor is Jan Steele.  Owner of the B&B, Jan has lived in the region for several years already, and takes great pride in sourcing local regional products to ensure maximum nutrient-density and flavour.

A graduate of the Pacific Institute of Culinary Arts as well as the Nutritional Therapy Association, Jan is an AIP Certified Coach and lifelong Celiac.  She is well-versed in the the full spectrum of gluten-free diets (from «simple» gluten-free to Paleo to the AIP). She will be happy to provide meals that are 100% compliant with whatever food sensitivities with which you are faced.

On completion of cooking school in 2018,
Jan Steele (aka La Goose) relocated to the beautiful Cévenne mountains in the South of France.  In the kitchen of her  18th c. stone house, she helps people to adopt (or better adhere to) a gluten-free, Paleo, or AIP diet.   Jan is also the producer of the podcast « Bien vivre, sans gluten, en France. »
