In-person workshops

Independent of, or in conjunction with a stay at our B&B, I would be happy to work with you to expand your skills in gluten-free cooking.  Some of my most popular workshops are outlined below.

Online Cooking Classes

Slowly but surely, I am building my repertoire of GF baking and pastry classes that are available via Teachable.  Each workshop is a “stand alone” course that uses one main recipe to teach you a specific technique. 

Choose only the recipe that you’re looking for, or bundle them to get a broader appreciation of all of the different techniques that contribute to successful gluten-free baking and pastry.

Gluten-free Baking

Come and get your hands wet side along an expert.
We’ll discuss the different properties of a number of gluten-free flours, and create a list of indispensable ingredients for the gluten-free kitchen.  We’ll prepare and discuss a sliced bread and a sourdough, various muffins, as well as pancakes and/or « crêpes ».  Finally, I’ll share my tips for making GF baking less cost-prohibitive.

Gluten-free Pastry

If a meal just isn’t complete without a tasty dessert, then this is the class for you.  We’ll discuss the different properties of a number of gluten-free flours, and create a list of indispensable ingredients for the gluten-free kitchen.  We’ll prepare and discuss both « pâte brisée » and « pâte sucrée », a puff pastry, and numerous filling options for all of the above.

Pizza !

Looking for a fun activity for you and your child?
Come and spend some time in the kitchen, debating
your favourite pizza toppings and making lunch.
I’ll provide a number of topping options, as well as
pre-baked pizza crusts.  You make, bake, and eat!

On completion of cooking school in 2018, Jan Steele (aka La Goose) relocated to the beautiful Cévenne mountains in the South of France.  In her 19th century home made of stone, she teaches clients to reclaim healthful culinary traditions from the past.  Jan also hosts visitors to the region, ensuring that their dietary restrictions -- be they gluten-free, Paleo, or AIP -- are respected to a T.
