One of my favourite recipes…
To keep you busy until you’re able to visit me in the Teaching Kitchen,
try this gluten-free / dairy-free, Paleo, and/or AIP recipe that is part of my weekly repertoire.
Roll Cake
– Gluten-Free & Dairy-Free –
Looking for a simple yet delicious gluten-free / dairy-free dessert? Here’s one that you can serve every week with a new flavour! Here, I chose a plum sauce made from the plums from our garden. (It’s a keeper!)
Ingredients
4 eggs, separated
125g white sugar
75g sweet rice flour
50g tapioca starch
1/2 tsp baking powder
Filling ideas
– a favourite jam
– chocolate / hazelnut spread
– lemon curd
Let your imagination run wild!
- Prepare your mixing bowl to make a meringue, by spraying it with vinegar and wiping with a paper towel.
- Separate your eggs, being VERY careful not to get any egg yolk into the whites.
- Add egg whites to your mixer and run on med-high to aerate. Once you’ve got a soft peak forming, slowly sprinkle the sugar onto the meringue and continue to beat.
- Remove from the mixer and gently incorporate the egg yolks into your meringue.
- Next, add your flour mixture… stirring only enough to incorporate.
- Pour your batter out onto a baking sheet, covered with parchment paper. Spread the batter into a rectangle, ensuring that there’s an equal thickness throughout.
- Bake 10 to 14 minutes at 350*F.
- Remove from the oven once your cake has nicely browned on the surface. Cover with a clean kitchen towel, and flip the whole thing over so that you can remove the parchment paper.
- While the cake is still warm, roll it up with the kitchen towel so that it can cool in its final “rolled” shape.
- Once it has completely cooled, un-roll your cake to add the filling.
- Sprinkle with icing sugar or cocoa and enjoy!
